  • 8 eggs
  • 1 tsp salt
  • 1/2 tsp turmeric powder
  • 1/2 tsp red chili powder
  • 1/2 tsp cumin powder
  • 1/2 cup chopped onions
  • 1/2 cup chopped tomatoes
  • 1/4 cup chopped cilantro
  • 2 green chilies, finely chopped
  • 2 tbsp oil

Instructions

  1. In a bowl, whisk the eggs with salt, turmeric powder, red chili powder, and cumin powder.

  2. Heat oil in a non-stick pan over medium heat.

  3. Add onions, green chilies, and tomatoes. Saute until onions turn translucent.

  4. Pour the egg mixture over the sauteed vegetables and spread it evenly.

  5. Cook on medium-low heat for 2-3 minutes or until the bottom is set.

  6. Flip the omelette carefully and cook for another 2-3 minutes or until cooked through.

  7. Sprinkle chopped cilantro on top and serve hot.
