How To Make Bombay Potato Frittata

Ingredients
- 6 medium-sized potatoes, peeled and diced
- 1 tbsp vegetable oil
- 1 onion, finely chopped
- 2 cloves of garlic, minced
- 1 tsp cumin seeds
- 1 tsp turmeric powder
- 1 tsp chili powder
- 1 tsp garam masala
- Salt to taste
- 6 eggs, beaten
- Fresh coriander leaves, chopped for garnish
Instructions

Boil the diced potatoes until they are fork-tender. Drain and set aside.

Heat the vegetable oil in a large frying pan over medium heat. Add the chopped onion and minced garlic. Cook until the onion is translucent.

Add the cumin seeds, turmeric powder, chili powder, garam masala, and salt. Stir well to combine.

Add the boiled potatoes to the pan and mix until they are coated with the spice mixture. Cook for 5 minutes, stirring occasionally.

In a separate bowl, beat the eggs until well combined. Season with salt and pepper.

Pour the beaten eggs over the potatoes in the frying pan. Cook on low heat for about 10 minutes or until the edges are set.

Preheat the oven to 180°C (350°F). Transfer the frittata to the oven and bake for 10-15 minutes or until the center is set and the top is lightly browned.

Remove from the oven and let it cool for a few minutes before slicing. Garnish with fresh coriander leaves.
