Ingredients

  • 4 medium-sized potatoes
  • 1 cup grated cheddar cheese
  • 1/4 cup chopped fresh chives
  • 4 slices of bacon
  • 1/4 cup milk
  • Salt to taste
  • Pepper to taste

Instructions

  1. Peel and chop the potatoes into chunks. Place them in a large pot of boiling water and cook until tender, about 15 minutes.

  2. While the potatoes are cooking, cook the bacon in a skillet until crispy. Remove and drain on paper towels, then crumble into small pieces.

  3. Drain the cooked potatoes and return them to the pot. Mash them with a potato masher until smooth.

  4. Stir in the grated cheese, chopped chives, milk, salt, and pepper. Mix well until the cheese is melted and all ingredients are combined.

  5. Serve the cheese and chive mash hot, topped with the crispy bacon.
