  • 2 egg whites
  • 1/2 cup granulated sugar
  • 1/2 tsp peppermint extract
  • 1/8 tsp cream of tartar
  • Red food coloring (optional)

Instructions

  1. Preheat oven to 200°F (95°C). Line a baking sheet with parchment paper.

  2. In a clean, dry bowl, beat the egg whites on medium-low speed until foamy.

  3. Add cream of tartar and continue to beat until soft peaks form.

  4. Gradually add the sugar, a tablespoon at a time, while beating on high speed until stiff, glossy peaks form.

  5. Gently fold in the peppermint extract and a few drops of red food coloring, if desired.

  6. Transfer the mixture into a piping bag fitted with a large round tip.

  7. Pipe small dollops onto the prepared baking sheet, spacing them about 1 inch apart.

  8. Bake for 1 hour 30 minutes or until the meringues are dry and crisp.

  9. Turn off the oven and leave the meringues inside for an additional 30 minutes to cool completely.

  10. Store in an airtight container at room temperature.
