Ingredients

  • 1.5 lbs chicken thighs, bone-in and skin-on
  • 1 tablespoon vegetable oil
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 1 bell pepper, cut into strips
  • 2 carrots, sliced
  • 1 cup potatoes, cubed
  • 1 cup tomato sauce
  • 1 cup chicken broth
  • 2 tablespoons soy sauce
  • 1 bay leaf
  • 1 teaspoon sugar
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the vegetable oil over medium heat.

  2. Add the chicken thighs and cook until browned on all sides. Remove from the pot and set aside.

  3. In the same pot, sauté the onions and garlic until fragrant.

  4. Add the bell pepper, carrots, and potatoes. Cook for 5 minutes, stirring occasionally.

  5. Return the chicken thighs to the pot and pour in the tomato sauce, chicken broth, and soy sauce. Stir to combine.

  6. Add the bay leaf and sugar. Season with salt and pepper to taste.

  7. Bring the mixture to a boil, then reduce heat to low. Cover and simmer for 30 minutes or until the chicken is cooked through and the vegetables are tender.

  8. Serve hot with steamed rice.
