  • 18 oz barbecue sauce
  • 3 cups apple juice concentrate
  • ⅓ cup brown sugar
  • 1 tbsp olive oil
  • 1 tbsp chili powder
  • 1 tsp ground black pepper
  • 4 garlic cloves (chopped)
  • 6 tbsp onion (chopped)
  • 1 cup fresh parsley (chopped)
  • 3 lbs fryer chicken cut-up (skin removed if desired)
  1. In a small saucepan make the BBQ marinade by combining the barbecue sauce, brown sugar, olive oil, pepper, and chili powder.

  2. Blend well then add in the garlic, onions, and parsley. Slowly add in the apple juice concentrate then mix well.

  3. Place chicken pieces inside a ziplock bag and pour the marinade over the chicken. Seal the bag and refrigerate for at least 2 to 4 hours.

  4. When ready to grill, place the chicken skin side down, on a gas grill over medium heat or on a charcoal grill 4 to 6 inches from medium coals.
