How To Make Chinese Tofu and Cashew Stir-Fry
A delicious and healthy stir-fry packed with protein and crunchy cashews, perfect for a quick midweek meal.

Ingredients
- 2 tbsp vegetable oil
- 450g firm tofu, diced
- 1 red onion, sliced
- 2 cloves garlic, minced
- 150g snow peas
- 1 red bell pepper, sliced
- 50g cashew nuts
- 2 tbsp soy sauce
- 1 tsp cornstarch
- 1 tsp honey
- Salt and pepper to taste
Instructions
- In a large frying pan or wok, heat the oil over medium heat.
- Add the diced tofu and cook for 5-7 minutes until golden brown.
- Add the sliced onion and garlic and cook for a further 2-3 minutes until softened.
- Add the snow peas, bell pepper and cashew nuts and cook for another 2-3 minutes.
- In a small bowl, mix together the soy sauce, cornstarch, honey and 2 tbsp of water.
- Pour the sauce over the stir-fry and toss to coat evenly.
- Cook for a final 1-2 minutes until the sauce has thickened and the vegetables are tender.
- Season with salt and pepper to taste.
- Serve immediately with steamed rice or noodles.
