Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/4 tsp ground cardamom
  • 1/2 cup coconut milk
  • 1/4 cup water
  • 1 tsp vanilla extract
  • Vegetable oil for frying
  • Powdered sugar for dusting

Instructions

  1. In a mixing bowl, whisk together the flour, sugar, baking powder, salt, and ground cardamom.

  2. In a separate bowl, mix the coconut milk, water, and vanilla extract.

  3. Slowly pour the wet ingredients into the dry ingredients, stirring until a sticky dough is formed.

  4. On a well-floured surface, knead the dough for about 5 minutes until it becomes smooth and elastic. Cover and let it rest for 10 minutes.

  5. Heat vegetable oil in a deep pot or fryer over medium-high heat.

  6. Roll out the dough to about 1/2 inch thick and cut into small squares or triangles.

  7. Gently drop a few pieces of dough into the hot oil and fry until golden brown on both sides.

  8. Remove the fried beignets from the oil and drain on a paper towel-lined plate to remove excess oil.

  9. Repeat the frying process with the remaining dough.

  10. Dust the warm beignets with powdered sugar and serve immediately.
