How To Make Mandazi (Coconut & Cardamom Beignets)

Ingredients
- 2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1 tsp baking powder
- 1/4 tsp salt
- 1/4 tsp ground cardamom
- 1/2 cup coconut milk
- 1/4 cup water
- 1 tsp vanilla extract
- Vegetable oil for frying
- Powdered sugar for dusting
Instructions

In a mixing bowl, whisk together the flour, sugar, baking powder, salt, and ground cardamom.

In a separate bowl, mix the coconut milk, water, and vanilla extract.

Slowly pour the wet ingredients into the dry ingredients, stirring until a sticky dough is formed.

On a well-floured surface, knead the dough for about 5 minutes until it becomes smooth and elastic. Cover and let it rest for 10 minutes.

Heat vegetable oil in a deep pot or fryer over medium-high heat.

Roll out the dough to about 1/2 inch thick and cut into small squares or triangles.

Gently drop a few pieces of dough into the hot oil and fry until golden brown on both sides.

Remove the fried beignets from the oil and drain on a paper towel-lined plate to remove excess oil.

Repeat the frying process with the remaining dough.

Dust the warm beignets with powdered sugar and serve immediately.
