Ingredients

  • 1 sheet of puff pastry, thawed
  • 1 cup of fresh spinach, chopped
  • 4 oz of goat’s cheese
  • 1 egg, beaten

Instructions

  1. Preheat the oven to 400°F (200°C).

  2. Roll out the puff pastry sheet and cut it into four equal squares.

  3. Place a spoonful of chopped spinach in the center of each pastry square.

  4. Crumble goat’s cheese over the spinach.

  5. Fold the corners of the pastry squares towards the center, forming a neat pouch.

  6. Brush the beaten egg over the tops of the pastry pouches.

  7. Place the puff pastry pouches on a baking sheet lined with parchment paper.

  8. Bake for 20 minutes, or until the pastry is golden brown and puffed up.

  9. Serve warm and enjoy!
