How To Make Whole Foods Lentil Soup Recipe

Ingredients

  • 1 tbsp olive oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 2 celery stalks, chopped
  • 2 carrots, chopped
  • 1 cup dried lentils, rinsed
  • 4 cups vegetable broth
  • 1 tsp cumin
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp chopped fresh parsley

Instructions

  1. Heat olive oil in a large pot over medium heat.

  2. Add onion and garlic, sauté until soft.

  3. Add celery and carrots, cook for 5 minutes.

  4. Add lentils, broth, cumin, paprika, salt, and black pepper. Bring to a boil.

  5. Reduce heat to low, cover, and simmer for 30 minutes or until lentils are tender.

  6. Stir in parsley and serve hot.
