How To Make Spago’s Apple Tart Recipe

A delicious French-inspired apple tart with a flaky, buttery crust and thinly sliced, caramelized apples.

Preparation: 30 minutes
Cooking: 1 hour
Total: 1 hour and 30 minutes

  • -1 1/2 cups all-purpose flour
  • 1/2 cup butter, chilled and chopped
  • -2 tbsp granulated sugar
  • -1/4 cup ice water
  • -3 large Granny Smith apples
  • -1/4 cup butter
  • -1/2 cup granulated sugar
  • -1/2 tsp cinnamon
  • -1/4 tsp nutmeg
  • -1/4 tsp salt

  1. To make the pastry, combine the flour, sugar, and chilled butter in a food processor and pulse until the mixture resembles coarse breadcrumbs.

  2. Add the ice water and pulse until the mixture comes together into a ball of dough.

  3. Flatten the dough into a disc, cover with plastic wrap, and chill in the refrigerator for 30 minutes.

  4. Preheat the oven to 375°F.

  5. Roll the pastry out on a lightly floured surface to fit a 9-inch tart pan.

  6. Peel and core the apples, then slice thinly.

  7. Melt the butter in a large pan over medium heat.

  8. Add the apple slices, sugar, cinnamon, nutmeg, and salt and stir to combine.

  9. Cook for 10-15 minutes until the apples are softened and caramelized.

  10. Arrange the apple slices over the pastry in the tart pan, overlapping slightly.

  11. Bake the tart for 30-40 minutes, until the pastry is golden brown and the apples are bubbling.

  12. Serve warm with a scoop of vanilla ice cream.
