How To Make Spago’s Chocolate Lava Cake

Ingredients

  • 1/2 cup unsalted butter
  • 6 oz semisweet chocolate chips
  • 2 eggs
  • 2 egg yolks
  • 1/4 cup granulated sugar
  • 2 tbsp all-purpose flour
  • Pinch of salt
  • Non-stick cooking spray

Instructions

  1. Preheat oven to 425°F.

  2. Melt butter and chocolate chips together in a double boiler until smooth.

  3. In a separate bowl, whisk eggs, egg yolks, and sugar until light and fluffy.

  4. Add melted chocolate mixture to egg mixture and whisk until combined.

  5. Sift in flour and salt, gently folding until just combined.

  6. Grease four 4 oz ramekins with non-stick cooking spray.

  7. Divide batter evenly among ramekins.

  8. Bake for 12-15 minutes, until edges are set but center is still jiggly.

  9. Remove from oven and let cool for 1 minute before carefully flipping onto a plate.

  10. Serve immediately and enjoy the oozing chocolate center!
