How To Make Spago’s Lemon Sorbet

Refreshing and tart, this lemon sorbet is the perfect palate cleanser.

Preparation: 10 minutes
Cooking: 10 minutes
Total: 1 hour 20 minutes

Serves:

Ingredients

  • 1 cup water
  • 1 cup sugar
  • 1 cup fresh lemon juice
  • 1 tbsp lemon zest

Instructions

  1. In a saucepan, combine water and sugar. Bring to a boil, then reduce heat and simmer until sugar dissolves.

  2. Remove from heat and stir in lemon juice and zest.

  3. Pour mixture into a shallow container and freeze for 1 hour.

  4. Stir mixture, breaking up any ice crystals.

  5. Return to freezer and freeze until firm, 2-4 hours.

  6. Scoop into bowls and serve.
