How To Make Spago’s Lemon Sorbet
Refreshing and tart, this lemon sorbet is the perfect palate cleanser.

Cooking: 10 minutes
Total: 1 hour 20 minutes

Ingredients
- 1 cup water
- 1 cup sugar
- 1 cup fresh lemon juice
- 1 tbsp lemon zest
Instructions

In a saucepan, combine water and sugar. Bring to a boil, then reduce heat and simmer until sugar dissolves.

Remove from heat and stir in lemon juice and zest.

Pour mixture into a shallow container and freeze for 1 hour.

Stir mixture, breaking up any ice crystals.

Return to freezer and freeze until firm, 2-4 hours.

Scoop into bowls and serve.
