Ingredients
- 1 cup quinoa
- 2 sweet potatoes, diced
- 1 red onion, sliced
- 1 red pepper, sliced
- 1 can black beans, drained and rinsed
- 2 avocados, sliced
- 2 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp smoked paprika
- Salt and pepper to taste
- Lime wedges for serving
Instructions

Preheat oven to 400°F.

Cook quinoa according to package instructions.

Toss sweet potatoes, red onion, and red pepper with olive oil, garlic powder, smoked paprika, salt, and pepper.
