Ingredients
- 2 cups quinoa
- 2 cups kale, chopped
- 2 cups cherry tomatoes, halved
- 2 cups cucumber, chopped
- 1 cup red onion, diced
- 1 can chickpeas, drained and rinsed
- 1/4 cup kalamata olives, sliced
- 1/4 cup feta cheese, crumbled
- 2 tbsp olive oil
- 2 tbsp lemon juice
- 1 tbsp dried oregano
- Salt and pepper to taste
Instructions

Cook quinoa according to package instructions and set aside.

In a large bowl, combine kale, cherry tomatoes, cucumber, red onion, chickpeas, olives, and crumbled feta cheese.

In a small bowl, whisk together olive oil, lemon juice, dried oregano, salt, and pepper. Pour over the bowl and toss to combine.

Divide the quinoa among 4 bowls and top with the Mediterranean mixture.
