How To Make Emeril Lagasse Shrimp and Corn Chowder Recipe

This creamy and flavorful chowder is the perfect comfort food with succulent shrimp and fresh corn.

Serves:

Ingredients

  • 1 pound of shrimp, peeled and deveined
  • 4 ears of corn, kernels removed
  • 6 slices of bacon, diced
  • 1 onion, diced
  • 2 celery stalks, diced
  • 1 red bell pepper, diced
  • 3 garlic cloves, minced
  • 1/4 cup of flour
  • 4 cups of chicken broth
  • 1 cup of heavy cream
  • 2 tbsp of chopped fresh parsley
  • Salt and pepper to taste

Instructions

  1. In a large pot, cook the bacon until crispy, then remove and set aside.

  2. Saute the onion, celery, and bell pepper in the bacon fat until softened, then add the garlic and cook for one more minute.

  3. Add the flour and cook for 2-3 minutes until it forms a thick paste.

  4. Whisk in the chicken broth and bring to a simmer. Add the corn and simmer for 10 minutes.

  5. Add the shrimp and cook for 5 minutes until they are pink and cooked through, then add the heavy cream and bacon.

  6. Season with salt and pepper to taste and sprinkle with chopped parsley before serving.
