Ingredients

  • 1 1/2 lbs medium shrimp, peeled and deveined
  • 2 tbsp vegetable oil
  • 1 large onion, chopped
  • 1 green bell pepper, chopped
  • 2 celery stalks, chopped
  • 2 cloves garlic, minced
  • 1 tsp smoked paprika
  • 1/2 tsp cayenne pepper
  • 1/2 tsp dried thyme
  • 1 bay leaf
  • 1 can (14.5 oz) diced tomatoes
  • 1 tsp Worcestershire sauce
  • Salt and pepper, to taste
  • Cooked rice, for serving
  • Chopped fresh parsley, for garnish

Instructions

  1. Heat the vegetable oil in a large skillet over medium-high heat.

  2. Add the onion, green bell pepper, and celery. Cook until the vegetables are softened, about 5-7 minutes.

  3. Add the garlic and cook for another minute.

  4. Stir in the smoked paprika, cayenne pepper, thyme, and bay leaf.

  5. Add the diced tomatoes (undrained) and Worcestershire sauce.

  6. Bring to a simmer and let cook for about 10 minutes.

  7. Add the shrimp to the skillet and cook until they turn pink, about 5 minutes.

  8. Season with salt and pepper to taste.

  9. Serve over cooked rice and garnish with fresh parsley.
