How To Make Emeril Lagasse Creole Chicken Recipe
Juicy chicken seasoned with Emeril’s signature Creole spice blend, pan-seared to perfection and baked to tender, juicy goodness.

Ingredients
- 4 boneless, skinless chicken breasts
- 2 tbsp of Creole seasoning blend
- 2 tbsp of olive oil
- 1 onion, chopped
- 1 red bell pepper, chopped
- 2 cloves of garlic, minced
- 1 cup of chicken broth
- 1 can of diced tomatoes, drained
- Salt and pepper to taste
Instructions

Preheat oven to 375°F.

Season chicken breasts with Creole seasoning.

Heat olive oil in a skillet over medium-high heat.

Sear chicken breasts until golden brown on both sides.

Remove chicken from skillet and set aside.

Add onion, bell pepper, and garlic to the skillet and sauté until vegetables are soft.

Add chicken broth and diced tomatoes to the skillet and stir well.

Place chicken breasts back in the skillet, spooning the vegetable mixture over them.

Cover skillet with a lid and bake in the oven for 25-30 minutes or until chicken is cooked through.
