How To Make Chi-Chi’s Chicken Quesadillas
Cheesy chicken and veggie quesadillas, made with Chi-Chi’s salsa, served with sour cream and guacamole.
Serves:
Ingredients
- 1 lb chicken breast, sliced
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 onion, sliced
- 2 cups shredded cheddar cheese
- 1/2 cup Chi-Chi’s Salsa
- 8 flour tortillas
- 2 tbsp vegetable oil
- Sour cream and guacamole for serving
Instructions

Heat a large skillet over medium-high heat. Add the chicken and cook until browned on both sides, about 5 minutes per side. Remove from skillet and set aside.

In the same skillet, add the red and green bell peppers and onion. Cook until slightly softened, about 5 minutes.

Add the Chi-Chi’s salsa to the skillet and stir until combined with the veggies.

Add the chicken back into the skillet and stir to combine.

Heat a separate skillet over medium-high heat. Add 1 tortilla and sprinkle with 1/4 cup of cheddar cheese. Spoon 1/4 of the chicken and veggie mixture on top of the cheese. Top with another tortilla.

Cook until the bottom tortilla is golden brown, about 2 minutes. Carefully flip the quesadilla and cook until the other side is golden brown and the cheese is melted, about 2 more minutes. Repeat with remaining tortillas and filling.

Serve the quesadillas hot with sour cream and guacamole.
