  • 1 lb asparagus, tough ends trimmed
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tsp honey
  • ½ tsp Dijon mustard
  • Salt and pepper, to taste
  • 4 cups mixed greens
  • ¼ cup crumbled feta cheese


  1. Heat a pan over medium-high heat. Add olive oil and asparagus.

  2. Cook for 5-7 minutes until bright green.

  3. In a small bowl, whisk together lemon juice, honey, Dijon mustard, salt, and pepper.

  4. Arrange the mixed greens on a platter, top with cooked asparagus, and drizzle with the lemon vinaigrette.

  5. Sprinkle feta cheese on top.
