  • 6 eggs
  • 1/2 cup grated Parmesan cheese

  • 2 tablespoons olive oil
  • 1 onion, diced
  • 3 cups chopped vegetables (such as zucchini, mushrooms, and bell peppers)


  1. Preheat oven to 375°F.

  2. In a large bowl, whisk together the eggs, Parmesan cheese, herbs, salt, and pepper.

  3. In a 10-inch oven-safe skillet, heat the olive oil over medium heat.

  4. Add the onion and cook for 2 minutes.

  5. Add the vegetables and cook until they are tender, about 5-7 minutes.

  6. Pour the egg mixture over the vegetables.
