- 6 eggs
- 1/2 cup grated Parmesan cheese
- 1/4 cup chopped fresh herbs (such as parsley, thyme, and chives)
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil
- 1 onion, diced
- 3 cups chopped vegetables (such as zucchini, mushrooms, and bell peppers)
