How To Make Alice Waters’ Beet Salad Recipe

A refreshing salad with sweet and earthy flavors, featuring beets, goat cheese and vinaigrette.

Serves:

Ingredients

  • 3 medium-sized beets, trimmed and scrubbed
  • 4 oz goat cheese, crumbled
  • 2 tbsp extra-virgin olive oil
  • 2 tbsp red wine vinegar
  • 1 tsp honey
  • salt and pepper to taste
  • 4 cups of mixed greens
  • 1/4 cup walnuts, chopped

Instructions

  1. Preheat oven to 375°F.

  2. Wrap beets in foil and roast for 1 hour to 1 hour 30 minutes, until tender. Allow to cool, then peel and cut into cubes.

  3. In a small bowl, whisk together olive oil, vinegar, honey, salt and pepper.

  4. In a large mixing bowl, toss mixed greens with beet cubes, walnuts, and vinaigrette.

  5. Serve topped with crumbled goat cheese.
