How To Make Coconut Milk Shrimp Curry
A creamy and flavorful shrimp curry made with coconut milk and spices.
Serves:
Ingredients
- 1 lb shrimp, peeled and deveined
- 2 tbsp oil
- 1 onion, chopped
- 3 garlic cloves, minced
- 1 tbsp ginger, minced
- 2 tbsp curry powder
- 1 tsp turmeric
- 1/2 tsp cayenne pepper
- 1 can (14 oz) coconut milk
- 1 cup chicken broth
- 2 tbsp fish sauce
- Salt and pepper, to taste
- Cilantro, chopped, for garnish
- Cooked rice, for serving
Instructions

Heat oil in a pot over medium heat. Add onion, garlic, and ginger and saute for 2-3 minutes until onions are translucent.

Add curry powder, turmeric, cayenne pepper and stir for 1 minute until fragrant.

Pour in coconut milk, chicken broth, and fish sauce. Bring to a boil.

Reduce heat and let simmer for 10 minutes until the sauce has thickened.

Add the shrimp and cook for 5-7 minutes until the shrimp are cooked through.

Season with salt and pepper to taste. Garnish with cilantro and serve with cooked rice.
