Ingredients

  • 1 and 1/2 cups all-purpose flour
  • 1 and 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 tbsp sugar
  • 1 egg
  • 1 and 1/4 cups coconut milk

Instructions

  1. In a mixing bowl, whisk together the flour, baking powder, baking soda, salt and sugar.

  2. Add in the egg and coconut milk, and mix until well combined.

  3. Heat a lightly oiled frying pan over medium-high heat.

  4. Drop batter by spoonfuls onto the pan, and cook until bubbles form on the surface.

  5. Flip and cook until browned on the other side.

  6. Serve hot with syrup or toppings of your choice.
