How To Make Coconut Milk Chia Pudding Recipe

A creamy and nutritious vegan pudding made with chia seeds and coconut milk.

Ingredients

  • 1 can of full-fat coconut milk (400ml)
  • 1/4 cup of chia seeds
  • 2 tbsp of maple syrup
  • 1 tsp of vanilla extract
  • Pinch of salt
  • Optional toppings: fresh berries, granola, shredded coconut

Instructions

  1. In a medium bowl, whisk together coconut milk, chia seeds, maple syrup, vanilla extract and salt.

  2. Let it sit for 5 minutes, whisk again to prevent clumps and place in the fridge.

  3. After 30 minutes, whisk once more and refrigerate for at least 4 hours or overnight.

  4. Serve chilled with desired toppings.
