How To Make Carrot & Cheddar Soup with Toast Soldiers
Carrots are delightful vegetables that can be mixed into a ton of recipes! In general, they’re perfect for roasting, stews, grilling, and soups. But they also contribute as a great main ingredient for sweet desserts. Some come in carrot cakes, bread, souffle, among others. Ingredients
- 4 large carrots, peeled and chopped
- 1 onion, chopped
- 2 cloves of garlic, minced
- 4 cups vegetable broth
- 1 cup grated cheddar cheese
- 1 cup milk
- Salt and pepper to taste
- 4 slices of bread
Instructions

In a large pot, heat some olive oil and sauté the onion and garlic until softened.

Add the chopped carrots to the pot and cook for another 2-3 minutes.

Pour in the vegetable broth and bring to a boil. Reduce heat, cover, and simmer for 15-20 minutes or until the carrots are tender.

Using an immersion blender or a regular blender, puree the soup until smooth.

Return the soup to the pot and stir in the grated cheddar cheese and milk. Cook over low heat until the cheese is melted and the soup is heated through.

Season with salt and pepper to taste.

While the soup is simmering, make the toast soldiers. Toast the bread slices and cut them into thin strips.

Serve the carrot and cheddar soup hot, garnished with some extra grated cheddar cheese, and accompanied by the toast soldiers.
