How To Make Tuna Balls with Pea & Sweetcorn Pasta

Ingredients
- 2 cans of tuna, drained
- 1 cup breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1/4 cup chopped parsley
- 2 cloves of garlic, minced
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 eggs, beaten
- 1 cup frozen peas
- 1 cup canned sweetcorn
- 8 oz pasta
- 1 cup heavy cream
- 1/2 cup grated cheddar cheese
Instructions

Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.

In a large mixing bowl, combine the tuna, breadcrumbs, Parmesan cheese, parsley, garlic, salt, and pepper. Mix well.

Shape the mixture into small balls, about 1 inch in diameter, and place them on the prepared baking sheet.

Bake the tuna balls in the preheated oven for 20-25 minutes, until golden brown and crispy.

In the meantime, cook the pasta according to the package instructions. Add the frozen peas and sweetcorn to the boiling water during the last 2 minutes of cooking. Drain the pasta and vegetables.

In a separate saucepan, heat the heavy cream over medium heat until it starts to simmer. Stir in the grated cheddar cheese until melted and smooth.

Add the cooked pasta, peas, and sweetcorn to the saucepan with the creamy sauce. Stir well to coat everything evenly.

Serve the tuna balls on top of the creamy pea and sweetcorn pasta. Enjoy!
