Spanish-Style Fried Eggs Recipe

Brighten up your breakfast with our simple Spanish-style fried eggs. The tomatoes and green bell peppers add a nice touch of color to a simple breakfast dish.

Ingredients

  • 4 tbsp olive oil
  • 4 green bell peppers, capsicum, cored, seeded, and chopped
  • 1 medium onion, chopped
  • 6 ripe tomatoes, seeded and chopped
  • salt and freshly ground pepper , to taste
  • 12 eggs, fried in olive oil
  • toast points

Instructions

  1. Heat the oil in a large skillet over high heat and sauté the peppers and onion until tender but not brown, about 5 minutes.
  2. Add the tomatoes and sauté 5 minutes.
  3. Season with salt and pepper and simmer until slightly thickened, about 5 minutes.
  4. Spoon the vegetable mixture onto a large serving platter and top with fried eggs.
  5. Serve with toast points.
