How To Make Fridge-Raid Fried Rice

Ingredients
- 2 cups of cooked rice
- 2 tablespoons of oil
- 1 onion, diced
- 2 cloves of garlic, minced
- 1 carrot, diced
- 1 bell pepper, diced
- 1 cup of frozen peas
- 2 tablespoons of soy sauce
- 2 eggs, beaten
- Salt and pepper to taste
- Optional toppings: green onions, sesame seeds
Instructions

Heat oil in a large skillet or wok over medium-high heat. Add diced onion and garlic, sauté until fragrant.

Add diced carrot and bell pepper, sauté until slightly tender.

Push the vegetables to one side of the skillet and pour the beaten eggs on the other side. Scramble the eggs until fully cooked.
