How To Make Cheat’s Tuna & Sweetcorn Pancakes

Serves:

Ingredients

  • 1 can of tuna, drained
  • 1 cup of sweetcorn
  • 1 cup of all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup of milk
  • 1/4 cup of water
  • 2 green onions, finely chopped
  • 2 tbsp vegetable oil

Instructions

  1. In a large bowl, combine the flour, baking powder, salt, and black pepper.

  2. Add the milk and water to the dry ingredients and mix until well combined.

  3. Stir in the tuna, sweetcorn, and green onions.

  4. Heat the vegetable oil in a non-stick skillet over medium heat.

  5. Spoon 1/4 cup of the mixture onto the skillet and spread it out into a pancake shape.

  6. Cook for 2-3 minutes on each side, until golden brown and cooked through.

  7. Repeat with the remaining mixture.
