How To Make Steak & Onion Fajitas with Sweetcorn Salsa

Ingredients

  • 1 lb of sirloin steak, thinly sliced
  • 1 large onion, thinly sliced
  • 1 red bell pepper, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 2 tbsp of olive oil
  • 1 tsp of paprika
  • 1 tsp of cumin
  • 1 tsp of garlic powder
  • Salt to taste
  • 8 small flour tortillas
  • For the Sweetcorn Salsa:
  • 1 cup of sweetcorn kernels
  • 1/2 red onion, finely chopped
  • 1 jalapeno, seeds removed and finely chopped
  • Juice of 1 lime
  • 2 tbsp of fresh cilantro, chopped
  • Salt to taste

Instructions

  1. In a large bowl, combine the sliced steak, olive oil, paprika, cumin, garlic powder, and salt. Mix well and set aside to marinate for at least 10 minutes.

  2. Heat a large skillet over medium-high heat. Add the marinated steak and cook for about 5-7 minutes, or until browned and cooked to your desired doneness. Remove from the skillet and set aside.

  3. In the same skillet, add a little more olive oil if needed. Add the sliced onions and bell peppers. Cook for about 4-5 minutes, or until the vegetables are tender and slightly caramelized.

  4. While the vegetables are cooking, prepare the sweetcorn salsa. In a bowl, combine the sweetcorn kernels, red onion, jalapeno, lime juice, cilantro, and salt. Mix well.

  5. Warm the flour tortillas in a dry skillet or microwave.

  6. To serve, fill each tortilla with a portion of the cooked steak and onion mixture. Top with the sweetcorn salsa.

  7. Serve immediately and enjoy!
