How To Make Steak & Onion Fajitas with Sweetcorn Salsa

Ingredients
- 1 lb of sirloin steak, thinly sliced
- 1 large onion, thinly sliced
- 1 red bell pepper, thinly sliced
- 1 green bell pepper, thinly sliced
- 2 tbsp of olive oil
- 1 tsp of paprika
- 1 tsp of cumin
- 1 tsp of garlic powder
- Salt to taste
- 8 small flour tortillas
- For the Sweetcorn Salsa:
- 1 cup of sweetcorn kernels
- 1/2 red onion, finely chopped
- 1 jalapeno, seeds removed and finely chopped
- Juice of 1 lime
- 2 tbsp of fresh cilantro, chopped
- Salt to taste

In a large bowl, combine the sliced steak, olive oil, paprika, cumin, garlic powder, and salt. Mix well and set aside to marinate for at least 10 minutes.

Heat a large skillet over medium-high heat. Add the marinated steak and cook for about 5-7 minutes, or until browned and cooked to your desired doneness. Remove from the skillet and set aside.

In the same skillet, add a little more olive oil if needed. Add the sliced onions and bell peppers. Cook for about 4-5 minutes, or until the vegetables are tender and slightly caramelized.

While the vegetables are cooking, prepare the sweetcorn salsa. In a bowl, combine the sweetcorn kernels, red onion, jalapeno, lime juice, cilantro, and salt. Mix well.

Warm the flour tortillas in a dry skillet or microwave.

To serve, fill each tortilla with a portion of the cooked steak and onion mixture. Top with the sweetcorn salsa.
