Ingredients

  • 2 cans of tuna, drained
  • 1 cup of sweetcorn
  • 1/2 cup of breadcrumbs
  • 1/4 cup of finely chopped onion
  • 1/4 cup of finely chopped red bell pepper
  • 1/4 cup of mayonnaise
  • 2 tablespoons of fresh lemon juice
  • 1 tablespoon of Dijon mustard
  • 1/2 teaspoon of garlic powder
  • Salt and pepper, to taste
  • 2 tablespoons of vegetable oil

Instructions

  1. In a large bowl, combine tuna, sweetcorn, breadcrumbs, onion, bell pepper, mayonnaise, lemon juice, Dijon mustard, garlic powder, salt, and pepper. Mix until well combined.

  2. Shape the mixture into round patties, about 1/2 inch thick.

  3. Heat vegetable oil in a skillet over medium heat. Cook the fish cakes for 3-4 minutes on each side, or until golden brown and cooked through.

  4. Serve the tuna & sweetcorn fish cakes hot with a side of tartar sauce or lemon wedges.
