  • 1 cup all-purpose flour
  • 1 cup sweetcorn kernels
  • 1/2 cup milk
  • 2 tablespoons sugar
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 eggs
  • 2 tablespoons melted butter

Instructions

  1. In a mixing bowl, combine flour, sugar, baking powder, and salt.

  2. In a separate bowl, whisk together eggs, milk, and melted butter.

  3. Gradually add the wet ingredients to the dry ingredients, mixing until just combined.

  4. Stir in the sweetcorn kernels.

  5. Preheat a non-stick skillet or griddle over medium heat and lightly grease with butter or cooking spray.

  6. Pour 1/4 cup of batter onto the skillet for each pancake.
