How To Make Sweetcorn Pancakes
Delicious and fluffy pancakes made with sweetcorn, perfect for a sweet or savory breakfast or brunch.

Ingredients
- 1 cup all-purpose flour
- 1 cup sweetcorn kernels
- 1/2 cup milk
- 2 tablespoons sugar
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 2 eggs
- 2 tablespoons melted butter
Instructions

In a mixing bowl, combine flour, sugar, baking powder, and salt.

In a separate bowl, whisk together eggs, milk, and melted butter.

Gradually add the wet ingredients to the dry ingredients, mixing until just combined.

Stir in the sweetcorn kernels.

Preheat a non-stick skillet or griddle over medium heat and lightly grease with butter or cooking spray.

Pour 1/4 cup of batter onto the skillet for each pancake.
