How To Make Brie-stuffed Pancakes with Crispy Bacon

Ingredients
- 1 cup pancake mix
- 1 cup milk
- 2 eggs
- 4 slices of bacon
- 4 oz brie cheese, cut into small cubes
- Maple syrup, for serving
Instructions

Cook the bacon in a skillet over medium heat until crispy. Remove from skillet and set aside on paper towels to drain excess grease.

In a large bowl, whisk together pancake mix, milk, and eggs until well combined.

Heat a non-stick skillet or griddle over medium heat. Pour 1/4 cup of the pancake batter onto the skillet and spread it into a circle.

Place a few cubes of brie cheese and a piece of cooked bacon in the center of each pancake.

Pour another 1/4 cup of pancake batter on top, covering the cheese and bacon completely.

Cook the pancake until bubbles form on the surface, then flip and cook the other side until golden brown. Repeat with the remaining batter and filling.

Serve the brie-stuffed pancakes with crispy bacon warm, drizzled with maple syrup.
