How To Make Braised Beef with Anchovy Toasts

Ingredients
- 2 lbs beef chuck roast, cut into 2-inch cubes
- 1 tbsp olive oil
- 1 onion, diced
- 3 cloves garlic, minced
- 2 carrots, peeled and chopped
- 2 celery stalks, chopped
- 2 cups beef broth
- 1 cup red wine
- 2 sprigs fresh thyme
- Salt and pepper, to taste
- 4 slices bread
- 4 anchovy fillets
- 2 tbsp butter, softened
Instructions

Preheat the oven to 325°F (163°C).

Season the beef cubes with salt and pepper.

Heat the olive oil in a Dutch oven or large oven-safe pot over medium-high heat. Add the beef and brown on all sides. Remove the beef and set aside.

In the same pot, add the onion, garlic, carrots, and celery. Cook for 5 minutes, or until the vegetables are tender.

Return the beef to the pot and add the beef broth, red wine, and thyme sprigs. Bring to a boil, then cover and transfer to the preheated oven.

Bake for 2.5 to 3 hours, or until the beef is fork-tender.

While the beef is braising, prepare the anchovy toasts. Toast the bread slices until golden brown.

Spread each slice with softened butter, then top with an anchovy fillet.

Cut the toasts into bite-sized pieces and serve alongside the braised beef.

Remove the thyme sprigs from the pot and season the beef with additional salt and pepper, if needed.

Serve the braised beef hot, with the anchovy toasts on the side.
