How To Make Bacon & Brie Omelette Wedges with Summer Salad

Ingredients
- 6 slices of bacon, cooked and crumbled
- 6 eggs
- 1/4 cup milk
- Salt and pepper, to taste
- 4 oz brie cheese, cut into small pieces
- 1 cup mixed salad greens
- 1/2 cup cherry tomatoes, halved
- 1/4 cup red onion, thinly sliced
- 2 tbsp olive oil
- 1 tbsp balsamic vinegar
- Salt and pepper, to taste
Instructions

Preheat the oven to 350°F (175°C). Grease a 9-inch (23cm) round cake pan.

In a large bowl, whisk together the eggs, milk, salt, and pepper.

Heat a non-stick skillet over medium heat. Pour the egg mixture into the skillet and cook until set around the edges.

Sprinkle the cooked bacon and brie cheese evenly over the omelette.

Carefully transfer the skillet to the preheated oven and bake for 10-12 minutes, or until the eggs are fully set and the cheese has melted.

Remove from the oven and let cool for a few minutes. Cut the omelette into wedges.

In a separate bowl, combine the salad greens, cherry tomatoes, and red onion.

In a small jar, whisk together the olive oil, balsamic vinegar, salt, and pepper to make the dressing.
