Ingredients

  • 4 eggs
  • 2 tbsp olive oil
  • 1 onion, diced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 2 zucchinis, diced
  • 2 garlic cloves, minced
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions

  1. Heat olive oil in a large pan over medium heat. Add the onion, red bell pepper, and green bell pepper. Cook for 5 minutes until the vegetables are softened.

  2. Add the zucchini and garlic to the pan. Cook for another 5-7 minutes until the zucchini is tender.

  3. Season with salt and black pepper. Mix well.

  4. Make 4 wells in the vegetable mixture and crack an egg into each well. Cover the pan and cook for 4-5 minutes until the eggs are cooked to your liking.

  5. Serve the pisto con huevos hot.
