How To Make Mom’s Zucchini Bread

- 2 cups shredded zucchini
- 1 cup granulated sugar
- 1/2 cup vegetable oil
- 2 eggs
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
Instructions

Preheat the oven to 350°F (175°C). Grease a loaf pan.

In a large bowl, mix together the shredded zucchini, sugar, vegetable oil, eggs, and vanilla extract.

In a separate bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon.

Gradually add the dry ingredients to the zucchini mixture, stirring until just combined.
