  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 1/4 cup sugar
  • 1 tbsp baking powder

  • 1 cup sweetcorn kernels
  • 1 cup shredded cheddar cheese
  • 1/2 cup milk
  • 1/4 cup melted butter
  • 2 eggs

Instructions

  1. Preheat the oven to 375°F (190°C).

  2. In a large bowl, whisk together the cornmeal, flour, sugar, baking powder, and salt.

  3. Stir in the sweetcorn kernels and shredded cheddar cheese.

  4. In a separate bowl, whisk together the milk, melted butter, and eggs. Pour into the dry ingredients and mix until well combined.

  5. Pour the batter into a greased 9-inch square baking dish.

  6. Bake for 25-30 minutes or until golden brown and cooked through.
