Ingredients

  • 2 boneless, skinless chicken breasts, sliced
  • 2 red bell peppers, sliced
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon honey
  • 1 tablespoon cornstarch
  • 2 tablespoons vegetable oil
  • salt and pepper to taste

Instructions

  1. In a small bowl, whisk together soy sauce, honey, and cornstarch. Set aside.

  2. Heat vegetable oil in a large skillet over medium-high heat.

  3. Add chicken and cook until browned and cooked through, about 5-7 minutes.

  4. Add red bell peppers, garlic, and ginger to the skillet and stir-fry for 3-4 minutes.

  5. Pour in soy sauce mixture and stir to coat chicken and peppers evenly. Cook for 1-2 more minutes.

  6. Serve hot over rice or noodles.
