Instructions

  1. In a large bowl, whisk together eggs, salt, and black pepper.

  2. Heat butter in a large skillet over medium-high heat.

  3. Add red bell pepper and cook until slightly softened, about 3-4 minutes.

  4. Add chopped spinach and continue to cook until wilted, about 2-3 minutes.

  5. Pour egg mixture over the veggies in the skillet.

  6. Cook for 4-5 minutes or until the edges start to set.

  7. Using a spatula, carefully fold the omelette in half.

  8. Cook for an additional 2-3 minutes or until the eggs are fully set.
