- 8 eggs
- 1 red bell pepper, diced
- 2 cups fresh spinach, chopped
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 tbsp butter
Instructions

In a large bowl, whisk together eggs, salt, and black pepper.

Heat butter in a large skillet over medium-high heat.

Add red bell pepper and cook until slightly softened, about 3-4 minutes.
