How To Make Red Bell Pepper and Lentil Curry Recipe
This flavorful vegetarian curry is loaded with protein-rich lentils and delicious red bell peppers.

Ingredients
- 1 red bell pepper, chopped
- 1 onion, chopped
- 3 cloves of garlic, minced
- 1 tbsp olive oil
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1 tsp turmeric
- 1 cup of red lentils, rinsed and drained
- 3 cups of vegetable broth
- Salt and black pepper, to taste
- Fresh cilantro, chopped, for garnish
Instructions

Heat the olive oil in a pot over medium heat.

Add the onion, garlic, and red bell pepper. Cook for several minutes until they are fragrant and the vegetables have softened.

Add the cumin, coriander, and turmeric. Stir everything together constantly.

Add the lentils and vegetable broth. Simmer for 20-25 minutes or until the lentils are tender and the dish has thickened.
