How To Make White Bean and Escarole Soup Recipe

A hearty and healthy soup made with white beans and escarole that is perfect for chilly nights.

  • 2 cans of white beans, rinsed and drained
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried thyme
  • 6 cups chicken or vegetable broth
  • 1 head of escarole, washed and chopped
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste


  1. In a large pot, heat the olive oil over medium heat.

  2. Add the onion and garlic, and cook until softened.

  3. Add the rosemary and thyme, and stir to combine.

  4. Add the broth and white beans, and bring to a boil.

  5. Reduce the heat and simmer for 20 minutes.

  6. Add the escarole, and simmer for an additional 10 minutes.

  7. Season with salt and pepper to taste.

  8. Serve hot, topped with grated Parmesan cheese.
