  • 1/4 cup of cilantro, chopped
  • Juice of 1 lime
  • 1/4 cup of olive oil
  • Salt and pepper, to taste

Instructions

  1. In a large bowl, combine the black beans, red and yellow bell peppers, red onion, avocado, jalapeno, and cilantro.

  2. In a small bowl, whisk together the lime juice, olive oil, salt, and pepper.

  3. Drizzle the dressing over the salad and toss to combine.

  4. Serve cold.
