How To Make Pomegranate Chicken with Almond Couscous Recipe

Ingredients
- 4 chicken breasts
- 1/4 cup pomegranate juice
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon cumin
- 1/2 teaspoon paprika
- Salt and pepper, to taste
- 1 cup almond couscous
- 1 1/4 cups chicken broth
- 1/4 cup sliced almonds
- 1/4 cup fresh pomegranate seeds
- Fresh parsley, for garnish

In a bowl, mix the pomegranate juice, olive oil, minced garlic, cumin, paprika, salt, and pepper. Pour the mixture over the chicken breasts and let marinate for 10 minutes.

Heat a skillet over medium heat and add the marinated chicken breasts. Cook for 6-8 minutes per side, or until cooked through. Remove from the skillet and let rest for a few minutes before slicing.

In a separate saucepan, bring the chicken broth to a boil. Stir in the almond couscous, cover, and remove from heat. Let sit for 5 minutes, then fluff with a fork.

To serve, divide the almond couscous among plates. Top with sliced chicken breasts and sprinkle with sliced almonds, fresh pomegranate seeds, and fresh parsley.
