How To Make Pistachio Scones with a Lemon Glaze

Ingredients
- 1 3/4 cups all-purpose flour
- 1/4 cup granulated sugar
- 2 tsp baking powder
- 1/4 tsp salt
- 1/2 cup unsalted butter, cold and cubed
- 1/2 cup shelled pistachios, chopped
- 1/2 cup milk
- 1 tsp vanilla extract
- for the lemon glaze:
- 1 cup powdered sugar
- 1 tbsp fresh lemon juice
Instructions

Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.

In a large bowl, whisk together the flour, sugar, baking powder, and salt.

Add the cold cubed butter to the flour mixture and cut it in with a pastry cutter or your fingers until the mixture resembles coarse crumbs.

Stir in the chopped pistachios.

In a separate small bowl, whisk together the milk and vanilla extract.

Pour the milk mixture into the flour mixture and stir until just combined. Be careful not to overmix.

Transfer the dough to a lightly floured surface and gently shape it into a 1-inch thick rectangle.

Cut the dough into 4 equal squares, then cut each square diagonally to make 8 triangular scones.

Place the scones on the prepared baking sheet and bake for 15-18 minutes, or until golden brown.

While the scones are baking, prepare the lemon glaze by whisking together the powdered sugar and lemon juice until smooth.
