How To Make Roast Rabbit with Thyme

Total: 1 hour 45 minutes



  • 1 whole rabbit, approximately 2.5 lbs
  • 2 tablespoons olive oil
  • 1 tablespoon fresh thyme leaves
  • Salt and pepper, to taste
  • 4 cloves of garlic, minced
  • 1 lemon, sliced


  1. Preheat the oven to 350°F (175°C).

  2. Rinse the rabbit and pat it dry with paper towels.

  3. In a small bowl, mix together olive oil, thyme, salt, pepper, and minced garlic.

  4. Rub the mixture over the rabbit, making sure to coat it evenly.

  5. Place the rabbit in a roasting pan and surround it with lemon slices.

  6. Cover the roasting pan with foil and roast for 1 hour.

  7. Remove the foil and continue roasting for another 30 minutes, or until the rabbit is golden brown and cooked through.

  8. Let the rabbit rest for a few minutes before serving.
