How To Make Roast Rabbit with Thyme

Ingredients
- 1 whole rabbit, approximately 2.5 lbs
- 2 tablespoons olive oil
- 1 tablespoon fresh thyme leaves
- Salt and pepper, to taste
- 4 cloves of garlic, minced
- 1 lemon, sliced
Instructions

Preheat the oven to 350°F (175°C).

Rinse the rabbit and pat it dry with paper towels.

In a small bowl, mix together olive oil, thyme, salt, pepper, and minced garlic.

Rub the mixture over the rabbit, making sure to coat it evenly.

Place the rabbit in a roasting pan and surround it with lemon slices.

Cover the roasting pan with foil and roast for 1 hour.

Remove the foil and continue roasting for another 30 minutes, or until the rabbit is golden brown and cooked through.

Let the rabbit rest for a few minutes before serving.
