How To Make Rabbit Casserole Recipe
A savory and hearty rabbit casserole packed with vegetables and topped with crispy breadcrumbs.
Serves:
Ingredients
- 1 whole rabbit, cut into pieces
- 1 onion, diced
- 2 cloves of garlic, minced
- 2 carrots, sliced
- 2 celery stalks, sliced
- 1 can of diced tomatoes
- 1 cup of chicken broth
- 1 tsp of dried thyme
- Salt and pepper, to taste
- 1/2 cup of breadcrumbs
- 2 tbsp of olive oil
Instructions

Preheat oven to 350°F (175°C).

In a large skillet, heat olive oil over medium heat. Add rabbit pieces and cook until browned on all sides.

Add diced onions and garlic to the skillet and sauté for 2-3 minutes.

Add sliced carrots and celery to the skillet and stir to combine with the rabbit and onion mixture.

Pour in the can of diced tomatoes and chicken broth. Add the dried thyme and season with salt and pepper to taste.

Cover the skillet and transfer to the oven. Bake for 1.5-2 hours until the rabbit is cooked and tender.

Remove from the oven and sprinkle breadcrumbs over the top of the casserole.

Return to the oven and bake for an additional 15 minutes until the breadcrumbs are golden brown and crispy.
