What better way to get you in a happy mood than having a slice of pie? These baked dishes are perfect for those who can’t get enough of flaky pastries. From an apple variant to a lemon meringue, these pies pastries recipes will satisfy your pie and pastry cravings.

Serves:

Ingredients

  • 500g mixed game meat (such as pheasant, venison, and rabbit)
  • 200g cranberries
  • 200g roasted chestnuts, peeled and roughly chopped
  • 1 onion, finely chopped
  • 2 cloves of garlic, minced
  • 2 tbsp olive oil
  • 250ml red wine
  • 250ml beef or game stock
  • 2 sprigs of thyme
  • Salt and pepper to taste
  • 500g puff pastry

Instructions

  1. Preheat the oven to 180°C (350°F).

  2. In a large pot, heat the olive oil over medium heat and sauté the onion and garlic until softened.

  3. Add the game meat and cook until browned on all sides.

  4. Pour in the red wine and stock, and add the thyme sprigs. Season with salt and pepper.

  5. Simmer for 1 hour, then remove the thyme sprigs and stir in the cranberries and chestnuts.

  6. Transfer the mixture to a pie dish and let it cool slightly.

  7. Roll out the puff pastry on a floured surface and cover the pie dish. Trim any excess pastry and crimp the edges.

  8. Cut a few slits on the top of the pastry to allow steam to escape.

  9. Bake in the preheated oven for 45-50 minutes, or until the pastry is golden brown and crispy.

  10. Serve hot and enjoy!
