How To Make Rabbit & Mushroom Hotpot

Ingredients
- 1 rabbit, cut into serving pieces
- 8 oz mushrooms, sliced
- 2 carrots, sliced
- 1 onion, diced
- 4 cloves of garlic, minced
- 2 cups chicken broth
- 1 cup red wine
- 2 tablespoons soy sauce
- 1 tablespoon Worcestershire sauce
- 1 tablespoon dried thyme
- Salt and pepper to taste
- 2 tablespoons vegetable oil
- Chopped parsley for garnish
Instructions

Preheat the oven to 325°F (160°C).

In a large oven-safe pot, heat the vegetable oil over medium heat.

Add the rabbit pieces and brown them on all sides. Remove from the pot and set aside.

In the same pot, add the onions and garlic. Cook until softened and fragrant.

Add the mushrooms and carrots, and cook for another 5 minutes.

Return the rabbit pieces to the pot, along with any accumulated juices.

Pour in the chicken broth, red wine, soy sauce, Worcestershire sauce, and dried thyme. Season with salt and pepper to taste.

Bring the mixture to a simmer, then cover the pot and transfer to the preheated oven.

Let the hotpot cook for 1.5 to 2 hours, or until the rabbit is tender and the flavors have melded together.
